This video will show you how to make Ewa Agoyin stew.
Ingredients: Crayfish, Cameroon pepper (or habanero), shombo, 1 medium onion, Salt, 2 cubes of Maggi, and Palm oil.
Directions: Wash and soak the shombo and cameroon pepper in water for about 15 minutes.
Next, chop the onions. Pour them into the blender with the soaked shombo and pepper. Do not add tomatoes. Then, add the crayfish.
Bleach the palm oil by heating it in pan for about 5 to 10 minutes. Bleaching means the red palm oil should turn almost black. You may need to turn on your vent for this portion. Check the video if you do not know what the color should be.
After, pour the onion into the bleached oil. The onions should rise. Add the dry pepper, Maggi, salt, and blended mixture. Put it under low to medium heat for 50 to 45 minutes.
This stew is great with your plain beans.
